In a recent interview with Interview, yes that’s the name of it, Denis O’hare shared quite a bit of information about his childhood, projects past and present and True Blood. Denis never fails to have interesting interviews, so you won’t be disappointed if you read it in it’s entirety. Of course, one of the highlights of the Q&A was the question below.
BROWN: Whom do you think that Sookie should end up with?
O’HARE: You know, it’s tough. Obviously, I’m still a Bill fan just because I feel that that’s the most natural relationship for them. He seems like a marrying type. Eric obviously is never gonna settle down. Joe [Manganiello, who plays Alcide], while he’s amazing eye-candy and has this fun esprit de corps, just seems a little unstable. So, I’m a Bill fan. What can I say? That was the most romantic pairing for me.

Has there been a cast member who hasn’t said Bill, I can’t recall.

AFAIK, every member of the cast who has been asked have all said they are Bill/Sookie fans. This must really chap some fans hides, lol
I have never heard that Alex S has ever been asked this question, but I think everyone knows what he would say, and it would not be Eric. Like DOH said, Eric will never settle down and would never be satisfied with a simple life in Bon Temps.
DOH is one smart man, Bill/Sookie are such an obvious romantic soulmate type of couple on tv, only the willfully blind refuse to see it.

I think Kristen BVS might have said she likes Eric better… since she has to be loyal to her maker
Although I don’t think she was necessarily asked who should be with Sookie… but I don’t remember exactly.
And she’s allowed to have her own opinion
